Reheating Instructions for Goode Co. BBQ & Sides
Step One: Reheat, Step Two: A Treat.
Due to variations in ovens, smokers, and grills, warming times and temperatures may vary.
Smoked Brisket
PREHEAT CONVENTIONAL OVEN TO 275˚F (250˚F for convection oven)
- Preheat oven or grill.
- Use two pieces of foil—each about 36” in length—and place in pan forming an “x”.
- Remove brisket from package and place in the center of the foil. Fold up sides and pour 1/2 cup of water on top of the brisket.
- Seal foil in a “tent-like” fashion, leaving room between the meat and the foil.
- Cook 8 minutes per pound or until the internal meat temperature reaches 140˚F in the thickest area. Do not overheat—the brisket is already cooked.
- Remove the brisket from the heat and keep it wrapped in foil for 15 minutes. The resting time is very important to complete the heating process, and it will make your brisket easier to trim and slice.
BBQ Ribs
PREHEAT CONVENTIONAL OVEN TO 275˚F (250˚F for convection oven)
- Thaw 8-12 hours in a refrigerator before serving.
- Remove the ribs from the package and place each rack on foil about 36” in length.
- Fold up sides and seal in a “tent-like” fashion, leaving room between the meat and the foil.
- Heat for 1 hour.
- Let stand in foil for 10–15 minutes.
- Cut between the bones to make individual ribs, warm Goode Company BBQ sauce, serve, and enjoy.
Turkey Breast
PREHEAT CONVENTIONAL OVEN TO 350˚F (no fan / convection oven)
1. Remove the turkey breast from the refrigerator and let it sit at room temperature for 30 minutes.
2. Remove the turkey breast from the packaging, place it in a shallow roasting pan, and cover it tightly with foil before placing it into the preheated oven.
3. Heat for approximately 85–90 minutes, checking the internal temperature in the thickest part of the breast at the 60-minute mark to prevent overheating.
4. Continue heating until the internal temperature reaches 125–130°F.
5. Once the correct temperature is reached, remove the turkey breast from the oven while keeping it covered, and let it rest at room temperature for 15 minutes before slicing.
Keep in the refrigerator for 7 days, or freeze up to 1 year.
Whole Turkey
PREHEAT CONVENTIONAL OVEN TO 350˚F (no fan/ convection oven)
1. Remove your Mesquite Smoked Whole Turkey from the refrigerator and let it sit at room temperature for 45 minutes.
2. Remove the turkey from the packaging, place it in a roasting pan, and set it into the preheated oven.
3. Heat for approximately 95–100 minutes, checking the internal temperature in the thickest part of the breast at the 70-minute mark, as oven performance can vary widely.
4. Continue heating until the internal temperature reaches 135–140°F.
5. Once the correct temperature is reached, remove the turkey from the oven, cover it completely with foil, and let it rest for about 20 minutes before slicing.
Keep in the refrigerator for 1–2 weeks, or freeze up to 6 months.
Beef Tenderloin
PREHEAT CONVENTIONAL OVEN TO 275˚F (250˚F for convection oven)
- Thaw in refrigerator 2–3 days before serving.
- Let tenderloin sit out for 30 minutes before heating.
- When heating the tenderloin, use a cookie sheet with sides or a roasting pan. If you have a roasting rack, place it in the pan. If you don’t have a rack, cover the bottom of the pan with a piece of parchment paper.
- Carefully place the tenderloin on the rack (or on the parchment-lined pan).
- Place the pan in the oven and heat for 15 minutes, then lightly baste the tenderloin with olive oil using a basting brush.
- Cook for another 20 minutes or until the tenderloin reaches desired internal temperature.
Keep in the refrigerator for 7 days, or freeze up to 1 year.
Jalapeño Cheese Bread
FRESH-FROM-OVEN FLAVOR
If your bread arrives slightly frozen, place it on top of two soup cans until thawed. This will ensure that the bottom of the the bread does not retain moisture.
- Remove from the bag and slice using a serrated bread knife.
- Wrap the whole sliced loaf in foil and warm at 275˚F for 10–15 minutes.
Pecan Pie
- Preheat oven to 250.
- Remove film wrap to expose pie.
- Place pie in oven on top rack for 20 minutes.
- Remove pie from oven.
- Let cool to room temperature before slicing.
For best results cut slices starting from the center, outward.
