Ingredients for Tex-Mex Enchiladas:

  • 2 cups shredded or pulled BBQ meat of your choice
  • Goode’s Original BBQ Sauce
  • 1/2 cup cooked corn kernels (thawed from frozen, or drained canned for convenience)
  • 1/2 cup black beans (cooked, rinse and drain if using canned)
  • 8 fresh, soft corn tortillas (flour tortillas will work too, and may be easier to use, but you may need more meat if it’s a larger tortilla)
  • 1 cup sour cream
  • 1 (10 oz) can green enchilada sauce
  • 1/2 cup cheese (sharp cheddar for the most impact of flavor, but “fiesta mix” is a favorite, too - whatever you choose, the cheese needs to melt well)

Tex-Mex Enchilada Cooking Instructions:

  • Preheat oven to 375˚F
  • In dish, mix meat and BBQ sauce together - meat should be thoroughly coated but not too wet, otherwise the enchiladas may be soggy
  • In another bowl, whisk sour cream and salsa verde until smooth
  • In a third bowl mix the BBQ meat, corn, and black beans together to make the filling
  • Scoop about 1/4 cup of the BBQ mixture into each tortilla, roll it up tightly, and place it seam-side down in a baking dish
  • Pour the sour cream and salsa verde over the enchiladas evenly
  • Sprinkle with chosen cheese to taste
  • Bake for 20-25 minutes or until the dish is heated and the edges are bubbling
  • Finish with a garnish of fresh pico de gallo and serve hot

  • 1/2 cup fresh cilantro
  • 1/4 cup shredded cheese of choice (cheddar, fiesta blend, colby jack recommended)
  • 1/4 cup pico de gallo
  • 1/4 cup corn salsa
  • 1/4 cup sour cream
  • 8 lime wedges

Texas BBQ Brisket Taco Cooking Instructions:

  • Heat or cook your brisket as normal
  • Gather and your taco toppings - sour cream, pico de gallo, salsa, limes, cheese, etc
  • Heat a few drops of oil in a skillet over medium-high heat
  • Place tortillas in oil and cook for about 1 minute on each side until lightly browned
  • Repeat with remaining tortillas, adding oil as needed

  • 1 lb ground beef (substitute meat of choice)
